Ingredients:
10 small / medium potatoes
3 tablespoons of olive oil
1 cup of pitted green olives
2 cups of cherry tomatoes
2 medium onions – peeled and chopped
1 tablespoon of herb de provence
1/4 tsp of salt
1 tsp of coriander seeds
1/2 tsp of ground coriander seeds.
1/2 tsp of fennel seeds
Steps:
Preheat oven to 190C
Mix all of the ingredients in a large roasting pan.
Roast for 45 – 50 minutes.
