Rice Pudding

Rice pudding

Serves 10

Ingredients:

1 and a 1/2 cups of Sushi Rice

5 cups of coconut / rice milk or similar

2 cups of coconut cream

1/4 tsp of salt

1 cinnamon stick

2 cloves

4 – 6 cardamom pods (seeds removed from pods)

2 – 3 tablespoons of Demerara sugar or similar

3 tablespoons of maple syrup

1 tsp of vanilla essence

Ingredients for Serving suggestions:

10 cardamon pods for serving

20 – 30 berries for decoration. (In winter you can use dried cranberries if you can’t find fresh berries)

or poached pears

Steps:

Put the rice, milks and spices in a large pan on low for 20 mins.

After 20 mins add the sugar and syrup, stir lightly to combine.

Cover until tepid. (20 mins or so).

SERVING IDEAS:

Serve with an open cardamom pod on top and a couple of berries.

or serve with a wine poached pear and a little of its liquid.
