poached pear

Ingredients:

5 ripe firm pears (pealed).

1 bottle red wine

4 – 6 star anise

1 large orange – washed and sliced with the skin on

2 cinnamon sticks

2 cups of apple or pear juice

Steps:

In a large flat bottom pan arrange the pears and spices in the bottom, and then pour in the liquids.

Cover and cook on medium / low heat for approximately 20 minutes or until the red bottoms are tender.

After about 20 minutes, turn each pear so that the white tops are submerged into the red liquid.

Continue to cook for another 20 minutes.

Check periodically to make sure that the liquid has not burned off.

Allow to cool slightly before serving.

Serve on its own or perhaps with ice cream or rice pudding.
