Ingredients:
For the filling:
1 cup of brown sugar
1 cup of maple syrup
1/2 tsp of oat flour
1/2 tsp of psyllium flour
3 eggs
1/4 cup of df butter or coconut oil – melted
1/2 teaspoon of salt
1 teaspoon of ground cinnamon
2 teaspoon of vanilla extract
2 and 1/2 cups of pecans – half chopped and half whole.
2 table spoons of scotch (optional)
Steps:
Preheat oven to 180C
Put the pie base in the pie dish
Place the pecans in the pie base.
In a large mixing bowl, whisk the eggs
Add the other ingredients and combine well.
Pour the mixture over pecan nuts.
Lightly cover the pie with a layer of foil
Bake for 40 minutes
Remove the foil and bake for 5 minutes more.
