Ingredients:
1.5 cups of dark green or black French Lentils
1 large onion – diced
3 cloves of garlic – minced
3 carrots – diced
3 sticks of celery – diced
1 medium zucchini – diced
1 bouquet garni
1/2 tsp of salt
120 g of smocked bacon matchsticks
1 tsp of herb de provence
1 tsp of ground coriander
about a litre of stock
2 table spoons of olive oil
Steps:
Holding the stock, bouquet garni and lentils back,
Place all of the vegetables, spices, bacon and olive oil into a large deep saucepan.
Cover and cook on medium for 10 minutes or until the onions are glassy and the veggies are almost tender.
Add the lentils, bouquet garni and stock to the vegetables, and stir well.
Cover again and cook for 20 – 30 minutes or until the lentils are soft.
Serve
