Ingredients:
3/4 cup of gf flour: I used 2 table spoons each of Tapioca Flour, Almond, Chestnut, Rice Flours
3 eggs
1/2 cup of nut milk
1/2 cup of coconut cream
2 – 3 table spoons of raw sugar
1 table spoon of coconut oil (refined, not raw.).
2 cups of fruit – diced pear or pitted cherries for example.
pinch of salt
1 tsp of vanilla essence
1/4 tsp of french 4 spice
Steps:
Preheat oven to 200C
Into a cast iron skillet place the coconut oil, 2 cups of fruit, 1 tablespoon of sugar and the 4 spice.
Cover and sautee fruit in coconut oil and spices until tender. This will take 2 or 3 minutes
In the mean time make your batter by mixing the flours, the rest of the sugar, vanilla essence, eggs and milks until smooth
Pour the batter over the cooked fruit.
Place into the warm oven for 20 -25 minutes.
