Ingredients:
2 table spoons of olive oil
1/2 red cabbage, washed, thinly sliced and chopped
1 onion – peeled and finely chopped
1 clove of garlic – peeled, crushed and mashed with a pinch of salt
1 apple – washed and chopped fine
1/2 glass of red wine
1/2 cup of marsala wine
1 clove
1 star anise
1/2 tsp of coriander seeds – whole
1/2 tsp of herb de provence
2 good pinches of salt
1/4 – 1/2 tsp of french 5 spice (pepper, cinnamon, star anise, coriander and fennel)
1/2 cup of cranberries or raisins
Steps:
In a medium saucepan warm the olive oil
Adding the onion, apple, spices, salt and garlic saute over medium low heat for about 5 minutes or until the onion is glassy
Add the cabbage and saute for a further 5 minutes
Add the wine and marsala, cover and cook for 15 minutes more, periodically checking that it hasn’t dried out. If it looks like it might dry out, add 1/4 cup of water.
