Cardamom Carrot Cake

Cardamom carrot cake

Moist and chewy, with crunchy corners.

Ingredients:

2 1/2 cups of Gluten Free Flour

1/2 cup of Almond Flour

1 tsp of xanthum or acacia gum

1 tbsp of leavener

3 tsp of cinnamon

1/2 nutmeg nut – micro planed

5 cloves – finely ground

5 alspice berries – finely ground

Seeds of 20 cardamom pods – finely ground

1/2 tsp of salt

2 cups of raw sugar

1/2 cup of maple syrup

4 eggs

1/2 cup of apple sauce

1 cup of hazel nut or walnut oil

3 cups of shredded carrots

Icing Ingredients:

1 cup of melted dairy free butter OR grated coconut butter (not coconut oil or cream)

2 cups of powdered sugar

1 table spoon of fresh squeezed lemon juice

Seeds from 20 cardamom pods – remove seeds and finely grind them.

Steps for making the cake:

Preheat oven to 180C

Prepare the cake or muffin tin. Grease lightly.

Combine eggs, maple syrup, apple sauce and oil – beat well until emulsified

In a large mixing bowl combine the flours, leavener, spices, salt, sugar and carrot

Add the liquids to the dry ingredients – and mix.

Spoon the batter into the cake or muffin tin(s).

Put the tin(s) into the oven and bake for 27 – 38 minutes depending on the size of tin. (27-30mins for muffins and 30 – 38 for cakes).

Insert a skewer to check if the cake is cooked through. A dry skewer = cooked cake.

Steps for making the Icing:

Putting the dairy free butter or coconut butter into a saucepan

Begin to melt the dairy free butter / or grated coconut butter on medium / low heat

If you are using grated coconut butter – you can add the powdered sugar and the lemon juice now and stir to combine.

If you are using dairy free butter, melt it completely first, and then add the powdered sugar and stir to combine.

Add the ground cardamom seeds and lemon juice

Reduce the heat to low.

Stir for 1 minute to allow the cardamom flavour to infuse the icing.

Remove from the heat and allow to cool.

Once the cake is completely cooled – (aprox 45 minutes), and the icing is set – (aprox 30 minutes), (less if you refrigerate it), you can ice it.
