Smoked salmon pasta sauce

smoked salmon pasta

1lb of salmon ends (this is the cheaper off cuts of salmon, no need to use the pretty stuff)

3 table spoons of coconut yogurt

2 spring onions / scallions chopped fine

1 table spoon of mayonaise

1 minced garlic clove

2 table spoons of fresh dill (or dried if you don’t have fresh).

3 table spoons of olive oil

Juice of 1/2 – 1 lemon

1 tsp of capers

grated rind of 1 lemon

Steps:

Liquidize all of the ingredients until more or less smooth.

Add to your favorite, hot, ready to serve gf pasta.

Combine well

Then optionally for decoration add a small sprig of dill, a pinch of grated lemon, a couple of capers and some sliced scallions on top

Serve

NOTE: I like to eat this with a handful of arugula mixed into it.
