Honey mustard, pesto lemon, papaya, thai and japanese salad dressings
1) Honey Mustard Dressing – Ingredients:
1 tsp of dijon mustard, (my favorite are the tarragon infused mustards)
1 tablespoon of honey or maple syrup or a teaspoon of agave syrup
2 table spoons red wine vinegar or apple cider vinegar
2-3 table spoons of good olive oil
Big pinch of salt
2) Pesto Lemon Dressing – Ingredients:
1 large table spoon of dairy free Pesto
2 table spoons of fresh squeezed lemon juice
3 table spoons of olive oil
1 tsp of agave syrup
A pinch of salt
3) Papaya pip dressing (strange sounding but really lovely and a bit peppery) – Ingredients:
1 table spoon of fresh ground papaya seeds – grind in a herb mill (I use a coffee grinder reserved just for spices).
2 table spoons of wine vinegar
1 table spoon of honey
3 table spoons of good olive oil
1 pinch of salt
4) Thai salad dressing – Ingredients:
1 – 2 tblsp of thai or vietnamese fish sauce
2 table spoons of fresh squeezed lime juice (or rice wine vinegar if you can’t get limes)
1.5 table spoons of agave syrup (or dissolve 1 table spoon of sugar in a table spoon of hot water).
2 cloves of garlic – – peeled and minced
2 table spoons of peanut or sunflower oil
5) Japanese salad Dressing – Ingredients:
1/2 – 1 tsp of miso (optional).
2 table spoons of rice vinegar
1 tsp of sesame oil
1 table spoon of soy sauce (add half a table spoon and then a bit more to taste).
1/2″ of fresh ginger – peeled and minced
2 table spoons of peanut or sunflower oil
1 teaspoon of agave syrup
